Hot Brewing Tips: Rooibos teas need high heat to release all their goodness (flavor & antioxidants), so steep in boiling water at 210°- 215°F until your infusion reaches its best flavor. Longer steeping = more intense flavor. It's virtually impossible to over-steep rooibos due to extremely low tannins. Pairs well with milk and honey.
Fine Filter: Rooibos particles are very fine. You'll need a fine mesh strainer or just a paper coffee filter will do to keep the plant matter out of your drink.
Number of Steeps per Infusion: 2-4 steeps per infusion.
Don't throw out your used leaves yet! You can re-steep the same leaves within 2-4 hours of your previous steep. Don't wait too long, wet tea decomposes quickly and loses its flavor.
Our favorite re-use method: To get the best out of your used tea leaves: place the used leaves in a jar of cold water in the fridge overnight to make a smooth cold-brewed tea for the next day.
Do not refrigerate wet leaves after steeping. If you cannot re-steep immediately, you can spread the leaves on a paper towel to air dry in a well-ventilated area. Ensure leaves are fully dry within a few hours to prevent bacterial growth. Moist tea leaves are a breeding ground for bacteria and mold. Store in an airtight container in a cool, dark place. Re-use dried leaves within 24 hours.
** Be aware that re-drying can reduce the flavor intensity and, if not done properly, can still risk bacterial growth**
Re-Steeping: Use the same water temperature as your first infusion (boiling - 212°F) and increase steeping time by 1-2 minutes for each subsequent round. Rooibos might require 7 - 12+ minutes for each re-steep.
Average 8 oz. cups of tea per container: 2 oz. = 25 - 35 cups / 4 oz. = 50 - 65 cups
