Hot Brewing Tips:
Green teas are delicate and MUST avoid boiling water. Boiling water burns the leaves and cause bitterness. 160°-180°F is your best temperature. To get to this temp without a thermometer, just let boiled water sit for 2-3 minutes before steeping. Also avoid over-steeping, this will result in excessive bitterness as well.

Cold Brewing Tips: Cold brewed green tea is a smoother, sweeter, more delicate flavor. Cold water prevents the release of tannins and caffeine, and its almost impossible to over-brew or make the tea bitter. Do NOT use hot water! Just add your tea to cold, filtered water and refrigerate in a sealed container for 3-8 hours. It's safe to leave it in the fridge up to 12-24 hours to brew. 

Number of Steeps per Infusion: 2-4 steeps per infusion. 

Don't throw out your used leaves yet! You can re-steep the same leaves within 1-3 hours of your previous steep. Don't wait too long, wet tea decomposes quickly and loses its flavor.  Moist tea leaves are a breeding ground for bacteria and mold. 

Increase Steep Time: For each re-steep, add 30 - 60 seconds to the original steep time to get the most flavor out of each steeping. Maintain the original steeping temperature of 160°-180°F for each re-steep.

Benefits of Re-Steeping Green Tea: The flavor of the tea evolves after each steep, revealing different characteristics each time. Caffeine release is usually in the first infusion, subsequent infusions are much lower in caffeine. Some antioxidants are also extracted as the leaves are re-steeped.

Our favorite re-use method: If you don't have time to re-steep your leaves, you can get the best out of your used tea leaves by placing the used leaves in a jar of cold water in the fridge overnight to make a smooth cold-brewed tea for the next day.

Average 8 oz. cups of tea per container: 1.5 oz. = 20 - 30 cups / 3 oz. = 30 - 50 cups
