Hot Brewing Tips: Black teas must be steeped in near-boiling water for maximum flavor. Do not steep longer than 5 minutes and do not press on the tea leaves, as this releases excessive tannins and makes your tea bitter.
Cover While Steeping: Always cover your teacup, mug, or teapot while brewing to prevent all the delicious aromatic oils from escaping.
Number of Steeps per Infusion: 3-5 steeps per infusion.
Don't throw out your used leaves yet! You can re-steep the same leaves within 4-6 hours of your previous steep. Don't wait too long, wet tea decomposes quickly and loses its flavor.
Our favorite re-use method: To get the best out of your used tea leaves: place the used leaves in a jar of cold water in the fridge overnight to make a smooth cold-brewed tea for the next day.
Do not refrigerate wet leaves after steeping. If you cannot re-steep immediately, you can spread the leaves on a paper towel to air dry in a well-ventilated area. Ensure leaves are fully dry within a few hours to prevent bacterial growth. Moist tea leaves are a breeding ground for bacteria and mold. Store in an airtight container in a cool, dark place. Re-use dried leaves within 24 hours.
** Be aware that re-drying can reduce the flavor intensity and, if not done properly, can still risk bacterial growth**
Re-Steeping: Use the same water temperature as your first infusion (near boiling: 195° - 205°F) and increase steeping time by 1 minute for each subsequent round.
Average 8 oz. cups of tea per container: 2 oz. = 20 - 35 cups / 4 oz. = 45 - 60 cups
